The history of winemaking and consumption dates back thousands of years. Early civilizations discovered the process of fermentation, though the exact date remains unknown. However, by 7,000 B.C., cultivated vines were growing in the region of Mount Ararat and Asia Minor.

Successive civilizations continued to refine the processes of growing, making, and storing wine. The Sumerians, around 3500 B.C., developed irrigation systems that helped water the vineyards of Mesopotamia and other arid regions. The Assyrians, Babylonians, and Egyptians continued this trend.

Despite the Egyptians' preference for beer, the elite enjoyed wine. The pyramidal tombs in both the Valley of the Kings and the Valley of the Nobles feature wall hieroglyphics depicting grape growing, harvesting, and winemaking. The Egyptians were also the first to label wine vats to protect them from the negative effects of air.

The Greeks were pioneers in categorizing different grape varieties. They documented techniques and tools, inventing the pruning knife. They also created wine containers, known as amphorae, from clay to serve as storage vessels. The Romans adopted and further developed Greek inventions and techniques.
